Robert Parker says Juslyn makes one of the finest wines on Howell Mountain.
When British ex-patriots Perry and Carolyn Butler moved to California in 1982, they never dreamed they would own 42 acres of prime vineyard land in the heart of Napa Valley. They arrived in California as high-tech pioneers and founded their own computer company in the San Francisco Bay area. After routine 80-hour work weeks, the couple relaxed during weekend trips to Napa Valley, where they were bitten by the wine bug. Dreams of high-tech dominance soon turned to thoughts of returning to the land and grape growing.
In 1997, their dream became a reality when Perry and Carolyn sold their computer business and founded Juslyn Vineyards on a site overlooking the renowned Spring Mountain Winery. (The name, Juslyn, is derived from the names, Justine-the Butlers' daughter-and Carolyn.) In 1998, they made their first vintage of Juslyn from grapes purchased from Andy Beckstoffer as they waited patiently for their own vines to mature. Their patience paid in 2000, when they were able to harvest their estate for the first time to produce 80 cases of Spring Mountain cabernet sauvignon.
Since then, there has been no turning back. Perry and Carolyn have committed to making the best wine possible in the heart of Napa Valley's acclaimed Spring Mountain District. Having received 90+points from accredited publications like Robert Parker's Wine Advocate (December 2003) and Wine and Spirits Magazine (August 2004), the Butler's are proving that they are on the path of success and truly living the American dream.

2002 Cabernet Sauvignon Vineyard Select:
An inconsistent vintage, especially in the mountain vineyards, is outstanding. Made primarily from Cabernet Sauvignon, it exhibits a dense ruby/purple color, firm, austere tannin (a characteristic of the vintage), and complex notes of tobacco leaf, cedar wood, black currants, and earth. Araujo Estate is committed to producing estate wines of the highest caliber and distinction. Four different wines are produced: Cabernet Sauvignon Eisle Vineyard, Altagracia, a second estate Cabernet Sauvignon; Syrah Eisle Vineyard and Sauvignon Blanc Eisle Vineyard.
Fewer than 12 retailers are allocated Araujo wines in New York and New England and 42 nationally.
One half of production is allocated to the Vineyard's mailing list. The remainder is told to top restaurateurs and a handful of retailers worldwide. The California equal to a premier cru Bordeaux, Araujo's 38-acres east of Calistoga has a winery and cave complex built and designed only for Eisele Vineyards. Araujo has been recognized as one of the extraordinary cult wines produced in California. Miniscule production. Impossible-to-find. With prices-upon-release hitting the $250 mark and allocations at retailers in many cases of a single bottle, Colgin and Aubert have produced two of the greatest California Cabernet's and Chardonnay's respectively.
The Aubert Chardonnay was picked Domestic White Wine of the Year and the Colgin Syrah was picked as the Domestic Red Wine of the Year, both by Robb Report. This is the first time that both wines of the year were made by the same winemaker. The 2002 was the first vintage of the Syrah and was very, very limited.
Colgin grapes come from exceptional hillside vineyards with very special terroirs. These unique sites, coupled with the highest quality vineyard management and neo-classical winemaking techniques, produce wines with distinctive personalities. Each wine has a sense of place. They are seductive, hedonistic and memorable.
Colgin Cellar sis committed to sharing that success with those in need. Each year Colgin Cellars donates rare verticals and large format bottles to carefully selected charities involving health care, community services and the arts. Over five million dollars have been raised to date from our donations!
Colgin's favorite proverb: "Over a bottle of wine, many a friend is found."
Winemaker notes from Mark Aubert:
"A richly organic nose of earth, cracked pepper and forest floor pervade the senses as lush fruit aromas of plum and ripe cherries breath in and out of the wine. On the palate this cabernet explodes with sweet, chalky layers of tannin. Because of the northeast facing slopes where they reside, the limited sun exposure allows the vines to produce fruit with true "vin de garde," or "wine to age," tannins. Upon release, the Herb Lamb Cabernet will be a mere baby in the scheme of its life, so I am recommending a minimum additional cellar aging of 5 years before opening, and given its history, the wine will continue to soften as it ages gracefully over the next 15 to 25 years, if you can bear to keep it unopened for such time."
We will release 210 cases of the 2002 "Herb Lamb Vineyard" Cabernet Sauvignon in November 2006. Release price was $275.
Cariad
Winemaker notes from Mark Aubert:
"Upon release I am impressed with how this wine unfolds to reveal a wealth of depth. This is the magic of a blend. The old cabernet vines from the Madrona Ranch vineyard make a superb backbone for the blend, both aromatically and texturally. When the blend reacts with air, it truly comes alive. Delicious aromas of smoked meats, roast duck, cedar, and rhubarb take over. From time to time, the wine opens up to even more layers of aromas like Asian spices, soy sauce, tree bark and plum sauce. The fragrant perfume and acidity contributed by the Petit Verdot bring freshness to the wine as well as added aging potential. The 1999 Cariad is a deliciously plush and rich wine that is soft enough to drink now, but will continue to gain power over the next 25 years. The wine was aged in new French oak barrels for 18 months, without racking, and was bottled without fining or filtration in March 2001."
IX Estate
Wine connoisseur and critic, Robert Parker considers IX Estate "as close to a viticultural nirvana as I have ever seen." The Wine Advocate Issue 150. This twenty acre vineyard in the Pritchard Hill area of Napa Valley has been carved out of the rugged, rocky terrain of a one hundred and twenty acre hillside parcel that comprises IX Estate and is also home to Colgin's gravity fed winemaking facility. The low yielding vineyard overlooks Lake Hennessey and at 900-1400 feet the elevation insures a cooler than average temperature which gently ripens the fruit and preserves many subtle nuances in flavors. This site specific climate and terroir coupled with rigorous selection and neo-classical winemaking give the IX Estate Napa Valley Red Wine an unheralded complexity.
The 2004 Colgin IX Estate Napa Valley Red Wine is a blend of 59% Cabernet Sauvignon, 22% Merlot, 13% Cabernet Franc and 6% Petit Verdot.
Winemaker, Mark Aubert's Tasting Notes-
"My first impression of the 2004 IX Estate Napa Valley Red Wine gives new meaning to the word intense. All components of this cuvee are deeply pitched in both color and aromatics. The enticing black color of this wine gives the assurance of ripe grape skins and soft tannins. Perfectly delineated are the aromas of fresh red berries and site specific aromatics such as black licorice and fresh black cherry juice. The high elevation of this outstanding vineyard site creates an average five degrees cooler temperature which means slower ripening, allowing flavors to stay ahead of sugar accumulation, preserving subtle nuances and creating fine acid structure. The tannins are silky and the mouth feel is one of the rich and full bodied phenolics. This soft tannin structure frames the ageability and reassures continued complexity during bottle ageing. This complex wine was only racked once for blending and bottling and was bottled in March 2006 without fining or filtration. The 2004 IX Estate Napa Valley Red Wine will continue to improve for decades or will drink well in 2 to 5 years near term."

The 1999 Cariad marks Colgin's first-ever bottling of a Bordeaux Style Blend. This Cariad is a blend of 55% Cabernet Sauvignon, 35% Merlot, 5% Cabernet Franc, all from David Abreu's Madrona Ranch Vineyard and 5% Petit Verdot from reassures Thorevilos Vineyard, both in St. Helena. The word "Cariad" means love in Welsh. Ann Colgin discovered this word after the wedding invitations for Catherine Zeta-Jones (a native of Wales) and Michael Douglas' nuptials were sent with the words "love" and "cariad" engraved on each side. The wine is hedonistic in its complexity.
The color is dark and saturating with a surprising clarity for an unfined, unfiltered wine produced in the Bordeaux style. This wine embodies that structure that has become the hallmark of Colgin wines: bright jammy fruit aromas and character combined with soft ripe tannins. Strong black cherry and raspberry aromas lead into a beautifully balanced wine experience featuring fresh blueberry jam and an earthy freshness reminiscent of some of the finest wines from the Pauillac region of Bordeaux. A hint of slightly sweet tobacco leaf comes through in the background due to the 26 months this wine spent in the 100% new Taransaud barrels. The inaugural release of this wine offers a seductive experience now while the long, silky finish reflects a sublime balance between this rich oak and the focused structure of the tannins that will age beautifully for at least two decades.

The 1999 Cariad (450 cases) is a Bordeaux-like blend of 55% Cabernet Sauvignon, 35% Merlot, 5% Cabernet Franc, and 5% Petit Verdot that could easily pass for a high-class Medoc. It offers a complex nose of cedar, spice box, minerals, currants, and loamy soil, with well-integrated sweet oak, a layered texture, wonderful elegance, sweet fruit, and terrific length. It is hard to believe this wine was aged in 100% new Taransaud barrels as their influence is subtle. The vintage's austerity is evident in the wine's finish, so 3-4 years of cellaring is suggested. Anticipated maturity: 2006-2018.
Colgin's new proprietary red wine offering (which I referred to as Madrona Ranch in issue #132 of The Wine Advocate) has been officially named "Cariad" (Welsh for "love"). The fruit for this cuvee comes from Madrona Ranch, located in the northwestern corner of St. Helena. The only exception is a tiny amount of Petit Verdot (ranging from 5%-7% in the final blend) that emerges from a vineyard owned by David Abreu and Ric Foreman called Thorevilos.
Colgin, which is already a so-called "cult" wine, seems to have pushed the envelope of quality even higher ... as hard as that is to believe. As always, the truth is in the bottle ... in vino veritas.
Case production is less than 500 cases.
Mark Aubert left Peter Michael in 1999, replaced Helen Turley at Colgin and started his own label Aubert Wines. He purchased a 7 acre Chardonnay vineyard in 1999 and produced his first vintage in 2002 that is available here tonight. The Quarry Vineyard received 92-94 points from Parker and the Lauren 93-95. His chardonnay cuttings came from Le Montrachet and his Pinot Noir cuttings came from Vosne-Romanee.

Lot 17 - The Ultimate Food and Wine Future Purchase. A Dinner for Eight at Max restaurant Group's Newest restaurant, Max Fish in Glastonbury.
As one of the founding sponsors of the Connecticut Culinary Masters Classic, Rich Rosenthal and Stephen Abrams' Max Restaurant Group has been built upon a foundation of service, presentation, classic offerings, quality and innovation. It takes pride in doing things well. Very well.
Each of the six restaurants in The Max Restaurant galaxy has donated a dinner for eight people tonight. It is the second year they have done so. At the CCMC 2006 inaugural event, dinners at Max Restaurants raised almost $8000 for CCMC programs. And, each year we pair several wines from the year the restaurants opened their doors.
The group includes Max Downtown, (1986) Max-A-Mia (1991), Max-a-More, (1995) Max Oyster Bar (1999), Trumbull Kitchen (2001) and Max Tavern, (2003).
Tonight, the last and most unusual Max Restaurant dinner presented an even more unusual challenge pairing wine when it will open in late 2007.
So we have taken the proper steps--we will offer seven wines--one from each vintage matching the six restaurant's opening.
And to make it truly special, the new Max Fish restaurant dinner wines will be led by the extraordinary Cheval Blanc, 1986, from the cellar of Mark and Tracey Lunenberg.
1986 - Cheval Blanc is dark ruby in color, an opulently rich and fruity wine, full bodied, voluptuous and lush. Deceptively easy to drink when young.
Wine Spectator rated it 98 points, alluding to a Good concentration of plum, currant and berry aromas. It crams all those characteristics into a surprisingly lithe and elegant structure. This may age past our lifetimes.

1991 - From this vintage comes Robert Parker's 99-point Dominus, 1991.

1999 - From the wonderful 1999 vintage in Bordeaux we will offer the Chateau Mouton Rothschild, 1999, Pauillac
"The beautiful 1999 Mouton Rothschild may be a modern day clone of their 1962 or 1985. Its saturated ruby/purple color is followed by sumptuous aromas of cedar wood, crème de cassis, wood smoke, coffee, and dried herbs. The wine is forward, lush, and full-bodied. It is already complex as well as succulent, fleshy, and long. Tannin in the finish suggests more nuances will emerge in 4-5 years. It is a complex, classic Mouton.

2001 - Red Bordeaux are clearly the world's most collected wines, but relatively unknown White Bordeaux are more difficult to obtain and are some of the most memorable white wines one would ever enjoy. From the 2001 vintage one of the world's most stunning Laville Haut Brion (Pessac Leognan): "Citrus, honeysuckle, and white peach characteristics dominate the 2001's waxy bouquet. Big, bold, reserved and tight, but full-bodied, structured, and intense, it should be forgotten for the next 5-6 years.

2003 - From the 2003 vintage, we've selected one of America's most acclaimed single vineyard Chardonnay's from Kistler, the 2003, Russian River Valley, Dutton Ranch.
"Why is it that I always find buttery popcorn, tropical fruit, crème caramel, and almost roasted hazelnuts in the Chardonnays from the Dutton Ranch. The 2003 Chardonnay Dutton Ranch has that and a lot more fruit than is typical. Perhaps the low yields from a vineyard that is known for relatively abundant crops have produced a bit more intensity than usual. This is in-your-face Chardonnay that is not the most subtle wine by any means but Meursault premier cru-like, ripe and heady.

Lot 19 - Seven stunning examples of John Kongsgaard's finest offerings from 1997-2004. Another cult wine of extremely limited production.

Fifth-generation Napa natives John and Maggy Kongsgaard produce The Judge, Chardonnay, VioRous, Syrah and Cabernet Sauvignon. Shy-bearing vineyards and traditional low-intervention winemaking techniques produce powerful, graceful wines -- high intensity expressions of vineyard and variety. The core of their endeavor is the ten-acre vineyard they planted in the late 1970s on a rocky hilltop in southern Napa Valley which has belonged to the Kongsgaard family since the 1920s. In addition to these family acres, they direct the farming under long-term contract on another seven acres in the Napa Carneros and three acres near St. Helena. The winery, on the eastern rim of Napa Valley, is a cave drilled into the volcanic rock. Production is limited to what they can make with their own hands.
CHARDONNAY NAPA VALLEY is grown primarily on the shy-bearing Kongsgaard family vineyard described above. This vineyard gives the wine its dense, minerally core and extravagant honeyed aroma. Small amounts of wine made from two distinguished Carneros vineyards, Hudson and Hyde, are included in the blend, bringing stone fruit and citrus high-notes to the wine. Like The Judge, the Napa Valley Chardonnay is allowed to ferment in new French barrels without any human intervention other than the weekly stirring by hand - no yeast, no bacteria, no fining, no filtration.
Reviews:
SYRAH NAPA VALLEY is the result of a very gratifying viticultural relationship with the exceptional Carneros grower, Lee Hudson. Hudson has 2.7 acres of volcanic soil (unusual in the Carneros) committed to Syrah, which bear fruit of unique intensity when thinned to one cluster per shoot. Harvested with mature, silky tannins, the wine macerates for six weeks with the skins in the fermentation tank for full extraction of the white pepper, violets, and dark chocolate character typical of the noble Syrah. After evolving for two years in French oak barrels (50% new) and only two rackings, the Syrah is bottled without filtration or fining. The wine is expected to evolve in the bottle for decades.
Reviews:
Kongsgaard Viognier comes from 1500 Viognier and Roussanne vines grown on the Kongsgaard family vineyard with the extremely low yields typical of the property. The blend is made in the field, and the two varieties are pressed together and barrel fermented in old French oak barrels without the addition of cultured yeast. To achieve the ideal integration of the nearly opposite qualities of these two varieties, the blend differs from year to year and either grape can be the major contributor. Unlike the Chardonnays, the VioRous is bottled after just 10 months in barrel to capture the fresh fruit aromas. The high-toned perfume typical of Viognier is brought down to earth by the rustic Roussanne, creating an exotic, hedonistic wine.

Captivating flavors of currant, spice cake, tobacco and earth. A red blend in a Right Bank style with superb definition and snap. Finishes very long and juicy, with firm but thoroughly ripe tannins. This should gain in bottle for a decade or more.

Lot 27 - Almost Perfect--99-point Château Mouton Rothschild, 1986 and 97-point Pichon Lalalde, 1986. Two extraordinary producers, one memorable vintage.

"Ageless, yet balanced. Black color. Mint, mineral, berry and cherry. Full-bodied, chewy and tight. Long, long finish. A great, great wine.--Bordeaux retrospective. Drink now.” Wine Spectator 99 points.
Good medium ruby. Currant, currant leaf, cedar and dusty oak on the nose. Tightly wound and classic, with fabulous acids contributing to its powerful spine. Wonderfully pure and intense, with great verve and grip. But still quite locked up, and hiding its density. Finishes firmly tannic and extremely long. I remember mistaking the '86 Mouton for such international stars as Sassicaia in the early '90s, when it showed greater sweetness, but this wine has been quite shut down for the past several years. Château Pichon-Longueville Comtesse de Lalande, 1986

Subtle aromas of engaging rich cherry elements that is both dense and lush after lots of swirling. Palate: Soft and sweet style with slightly green character to the finish. Somewhat lighter in mouthfeel. Wine Enthusiast 94 points
Tony Soprano called the wine he and Christopher boosted from the Vipers in series Five episode a 1986 Chateau Pichon. Actually there are two wineries in Pauillac named Pichon-Longueville: Pichon-Longueville Comtesse de Lalande and Château Pichon-Longueville Baron. They were part of a single estate until 1860, when they split into the current pair. Both are classified as second-growths.
Based on the quick flash shown of the label the wine they boosted was the 1986 Pichon-Longueville Comtesse de Lalande. Robert Parker rates it a 97.
The 1986 is the most tannic, as well as the largest-framed Pichon-Lalande in over three decades. Whether it will ultimately eclipse the 1982 is doubtful, but it will be longer-lived. Dark ruby/purple, with a tight yet profound bouquet of cedar, blackcurrants, spicy oak, and minerals, this full-bodied, deeply concentrated, exceptionally well-balanced wine is, atypically, too brawny and big to drink young. Anticipated maturity: 1994-2015.
Wine Spectator rated both the Baron and the Lalande 97, describing the latter as: Amazingly rich and elegant with concentrated and compact fruit, layers of cassis, currant, vanilla and plum flavors and a remarkable aftertaste that is gentle and supple. Has the tannic framework for cellaring until at least 2010.
The 1986's are all fabulous wines, but they're also huge, backward, and tannic wines that still need a lot of time in the cellar. Yet, even so, they've all already thrown sediment. You simply can't drink these wines without prior decanting.

With the release of the 1974 Insignia in the spring of 1978, Joseph Phelps Vineyards became the first California winery to produce a blend of the traditional Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot grape varieties of Bordeaux under a proprietary label. Considered innovative at the time, the Insignia name was selected to represent the finest available production in each vintage year, and became the first proprietary wine of California to place blending above either varietal or vineyard designation as a determinant of quality. It would not be followed until a decade later by the second such wine, Opus One, and Insignia has remained the benchmark of this category for over a quarter century.
Insignia is an opulent wine of concentration, complexity and structure, with a superb balance of finely tuned acidity and dense, velvety tannins. Cassis, liquorices and spice are abundant on the palate, with notes of eucalyptus and earth. The finish is sweet, elegant and extended.
Rating
The 2003 Insignia (15,000 cases) performed much better this year than last, when I tasted it right after bottling. A blend of 84% Cabernet Sauvignon, 10% Petit Verdot and the rest Malbec and Merlot, it offers up attractive aromas of licorice, black currants, espresso roast, and background toasty oak. Full-bodied, opulent, and rich with outstanding depth, purity, and harmony, sweet tannin, and a long finish, it is approachable now, but will easily last for 20 years. The finest effort made in this century, is a blend of 78% Cabernet Sauvignon, 14% Merlot, 7% Petit Verdot, and 1% Malbec. Its dense purple color is accompanied by a fragrant perfume of espresso roast, Asian spices, crème de cassis, smoke, and minerals. Dense, voluptuous, full-bodied, rich, long, and harmonious, it can be enjoyed now or cellared for 2-3 decades.

Still River's Kara Brooks has recommended that the dinner take place on Friday, July 20th when the restaurant's extraordinary gardens are at their best. All of the vegetables that will be served with this meal will be grown organically by Kara on their own North Ashford Farm. As is the restaurant's practice, they will be harvested the day of the meal.

Lot 1015 - Four-Course Seasonal Dinner Menu for SIX at Cavey's Restaurant in Manchester Featuring Cristal Champagne and Château Mouton Rothschild
Whether one prefers the fine country Italian Riviera-style of Cavey's upstairs restaurant or the classical offerings from the extraordinary French restaurant, Cavey's has reigned almost 70 years as one of the state's premier dining destinations. It offers the best of both worlds.
Many hail Cavey's as the best restaurant in the state. The common denominator is the hands-on care lavished by chef-owner Steve Cavagnaro and his wife Kate. Their signature restaurant on the lower level is a luxurious salon of raised beige fabric covering walls and chairs, cut-crystal gas lamps, paneling from an upstate New York mansion and black-clad waiters attending to one's every need. The large potted palms give the two-level room an Edwardian feel, but the service and food are contemporary French.
Chef-owner Steve Cavagnaro, whose grandparents started the restaurant in 1936, has taken a special interest in the upstairs menu, overseeing its switch from southern to northern Italian.

Huge, with more and more aromas and flavors that invite you back. Reminiscent of a lemony crème brulee, with a wonderful acidity holding everything up. The 2004 Chardonnay Sbragia Limited Release (2,000 cases) is surprisingly restrained and delicate for this cuvee. Medium to full-bodied, with copious quantities of buttered popcorn, pineapple, orange blossom, and melon characteristics as well as outstanding depth, purity, and balance, it will last for 2-3 years. Wine maker notes from Ed Sbragia:
The vineyards Ed Sbragia customarily chooses to use in his Private Reserve Chardonnay are located around the town of Yountville where daytime temperatures slowly climb as the cooling morning fog recedes south to the San Pablo Bay. One vineyard, Gamble Ranch, consistently provides flavors that Sbragia calls “unctuous” and in 2004, he decided that this fruit would be ideal for his 2004 Sbragia Limited Release Chardonnay. As harvest approached, Ed and his winemaking partner, Laurie Hook, worked to identify the blocks with the most pristine clusters and delayed picking until they were sure the vines had packed every aroma and flavor nuance possible into the
After the grapes were gently destemmed and crushed, Ed aged each lot separately in new French oak, pairing subtleties he wanted to highlight in them with characteristics he has learned to expect in the different barrels. Malolactic fermentation and weekly lees stirring encouraged the creamy richness already evident in the juice and helped the oak aromas and flavors to be well integrated. The wine was aged for 10 months.

The goal of St Clement Vineyards has always been to produce small quantities of noble wines in the tradition of the classic European wine estate; wines which consistently reflect the unique and enduring characteristics of soil and climate.
With a cool beginning to the 2003 growing season, a warm spell in late spring encouraged normal bud break and flowering in the Cabernet vineyards. As temperatures warmed, eight to ten very warm days in September helped move the grapes to full maturity at harvest. This elegant Cabernet Sauvignon is made from fruit grown on the valley floor throughout Napa Valley and represents distinct growing regions from southern Napa to St. Helena. The addition of Cabernet Franc creates structure in the wine while a touch of Merlot adds length to the mid-palate and a layer of fruit aromatics on the nose.
Red cherry, rhubarb and spice aromas are the introduction to this elegant wine as flavors of raspberry, cherry and rhubarb pie co-mingle with anise, clove and hints of cocoa powder on the palate. Soft tannins carry this well-balanced Cabernet to a lengthy and flavorful finish.
It is 93% Cabernet Sauvignon, 4% Cabernet Franc and 3% Merlot.

Beni Dei Batasiolo Barolo 1995. Very rare Double Magnum
A classic extremely long-lived Piedmont red with excellent ageing capacity, this wine comes from soils known for producing Nebbiolo grapes able to produce beautiful, deep-colored Barolos with good acidity and high alcohol content.
The wine comes from a summit of a vast hillside in the village of Serralunga d'Alba, the heart of the Barolo wine-growing area. Soil is composed of six layers of marl (composed of limestone and clay), intermingled with sand.
It is a 100% Nebbiolo, bright, Garnet red with a nose that is termed ethereal and engaging, with hints of ripe fruits and spices such as prunes, figs and cloves. Full-bodied and austere. A well-structured wine.
It is ideal for accompanying game, roasts and strong, matured cheeses. Fills the break at the end of a meal before dessert.

Partner and Executive Chef Chris Torla has created a globally eclectic menu that emphasizes intense flavors and satisfying textures. One of the top Super Tuscans, Antinori's Tignanello is one of original Italian "meritage" blends of Sangiovese, Cabernet Sauvignon, and Cabernet Franc.
Intense ruby red color with light garnet hues. Complex and nicely harmonious aromas of tobacco, curry powder and blackberry and blackcurrant jam. A mouthfilling deliquescent sensation on the silky palate enhances the sweetness making the 2003 vintage a very stylish version of the Tignanello. A light hint of sweet, nicely rounded tannins in the finish make the wine more persistent.
Subtle and complex aromas of licorice, dried flowers and currant follow through to a full-bodied palate, with fine tannins and a tar and berry aftertaste. Wine Spectator 91 Points.

And then there is the food. Flaws didn't make any mistakes despite changing kitchens.
But the winning food he is delivering to tables shows he is dead serious about his profession. It's a nice blend.

UNTIL recently, a bistro meant a small, French neighborhood restaurant serving hearty, traditional cuisine. The menus at bistros vary by region, but you're likely to find certain standards like calves liver, frisée salad with a hot bacon vinaigrette and crème caramel.
I wouldn't call bistros casual except in comparison to three-star restaurants -- the French have a way of bringing decorum to their cuisine whatever the site -- but the aesthetic is simplicity. Straightforward home cooking, simply presented.
Restaurants calling themselves ''American Bistros'' have been making their way into this part of Connecticut. Like its counterpoint in France, the American bistro is a small neighborhood restaurant, but the cuisine is usually some interpretation of new American, a weaving of global ingredients and techniques.
Jack's in Old Saybrook, named for its young chef and owner, Jack Flaws, is a recent addition to the genre. Mr. Flaws describes his cuisine as ''global comfort food,'' a nonfussy blend of different ethnicities.
Mr. Flaws already has the appetizers down cold. The dishes are fresh and stylish, and the elements weave together beautifully. Tuna tartare is seasoned with fresh ginger, soy sauce and the right amount of lime to brighten it without obscuring the flavor of the fish; wasabi mayonnaise adds appropriate heat. Lightly seared, paper-thin slices of steak tartare ring a salad of thin-sliced fennel and green beans dressed in a creamy, subtly piquant dressing, with shaved Manchego cheese. Jack's is a serious restaurant and the food asks to be taken seriously.

When British ex-patriots Perry and Carolyn Butler moved to California in 1982, they never dreamed they would own 42 acres of prime vineyard land in the heart of Napa Valley. They arrived in California as high-tech pioneers and founded their own computer company in the San Francisco Bay area. After routine 80-hour work weeks, the couple relaxed during weekend trips to Napa Valley, where they were bitten by the wine bug. Dreams of high-tech dominance soon turned to thoughts of returning to the land and grape growing.

"In weight and texture, the 1981 Margaux is closest in style to the 1979. It is an outstanding wine, even in the company of the monumental wines of 1982, 1983, and 1986, although it does not have the power and weight of these vintages. It is still very dark ruby/purple-colored. The aromatics suggest ripe cassis fruit, spicy vanillin oakiness, and violets. Although the 1978 is a more powerful, fuller-bodied style of Margaux, it is less charming and fruity than the 1979. The 1978's nose has moved from one of ripe fruit and spicy oak, to tarry, truffle, earthy aromas that come across as slightly too masculine and meaty. Nevertheless, this is a rich, full-bodied, concentrated Margaux that only suffers in comparison with the great vintages produced under the Mentzelopoulos regime. Some of its rusticity may be due to tannins that were not totally ripe during the harvest. In any event, it remains one of the few great wines from the 1978 vintage. While I initially thought it would be fully mature within two decades of the vintage, it could still benefit from another 3-4 years of cellaring. Anticipated maturity: 2000-2020. 92 Points. As regular readers know, I'm big on Hartford. My relentless promotion of the city ranges from shrill to shameless. But halfway through my dinner at Bosc, I grudgingly admitted that Avon may not be all that bad. Fifteen minutes from downtown and there I was, sipping an exceptional glass of wine on a graceful terrace, taking in a stunning view of Talcott Mountain and wincing at the thought of having to leave.
Bosc serves its dishes with poise and warmth in a simple, serene atmosphere. In a way, it's a brochure for the charms of wealthy suburban dining - educated, indulgent cuisine, a design that provides comfort and privacy and a staff that waits on you hand and foot without the irritating tinge of subservience I too often see in upscale restaurants.
You'll pay for your pleasure, but it's worth it. On one evening, I ordered a chocolate sampler for $14, a seemingly steep tariff for a dessert. But a first bite of chocolate mousse brought a wide grin to my face and a forkful of ganache was so fantastic, I squealed like a piglet and banged my knees vigorously on the underside of the table. Not since the flawless desserts of Kent's Belgique have I seized upon tasting a dessert, and at Bosc I found it, nearly two hours closer to home. This dessert alone may have won Bosc its four stars.
Of course, there are more good things to eat and many of them. Tuna tartare is fresh, cool and delightful; foie gras with bee pollen is sweet and rich and perfect, and I am someone who nearly always detests foie gras. There are several bright, delicate salads and a crab cake that bucks the dish's monotony with a fragrant dose of lobster.
Entrees also dazzled the table. The kitchen does nearly everything well - exceptions were few and hardly worth mentioning. From the New York strip to the rack of lamb, quality is carefully monitored and the simplicity of the meat's flavor often predominates over its accompanying flavors. For example, my favorite dish was the pan-seared duck breast. The black fig reduction was bright and fabulous, and the toasted barley carried a nutty flavor that I welcomed as an uncommon side, but the duck itself is what impressed. With extravagant preparation, it's too easy to forget that duck has any flavor at all save a slight gaminess. At Bosc, I remembered the merits of duck itself, and that made for an extremely satisfying meal.
True to Bosc's dual role as a "kitchen and wine bar," the wine list is worth exploring. We enjoyed a perfect bottle on both of our visits, one of which a friend claimed was half the cost he'd seen at other restaurants. I also perused the cleverly crafted list of after-dinner drinks and sampled the Massenez William Pear, that bottle of brandy you may have seen with the whole pear floating inside. There's no more appropriate way to finish a meal at Bosc than with a drink that, like the restaurant itself, accentuates the finest points of a pear - it is sweet but not insipid, tart but not caustic, familiar in flavor, yet pleasantly surprising. I highly recommend you visit Bosc for your next memorable meal.

Lot 15227 (1) 3-Liter Château Ste. Michelle Canoe Ridge Merlot, 2003
A Double Magnum of one of Washington State's top Merlots.
“This Merlot exhibits bright red cherry and currant fruit aromas and flavors. Canoe Ridge Estate expresses itself in this way in most of the reds. We allow this Merlot to stay a little more refined and elegant, accenting it with spicy, restrained French oak, while retaining plenty of that trademark Washington concentration.”
Canoe Ridge Estate lies on a steep south-facing slope on the north bank of the Columbia River. The warm site benefits from the moderating effect of the Columbia River and promotes uniform ripening and excellent color development. Soils are sandy with bits of cobblestone and have low water holding capacity, enabling precise control of vine growth through drip irrigation and canopy management. The site typically enjoys an early bud break and a long growing season.

Lot 20040 - Turley Spring 2004 Releases Including Their Only White Wine.
Turley wines are among the most difficult to acquire with a waiting list lasting up to three years. And, after eight years you might obtain a single bottle allocations of their newest wines, White Coat. Coming up with a rare vertical collection is almost unheard of.
(1) 750 ml bottle White Coat San Louis Obispo County White Wine, 2004
The blend of Roussanne and Viognier has a dazzling yellow sapphire color. Its tropical fruit nose includes aromas of honeydew, pear and honey. It finishes nicely, crisp and clean.
(1) 750 ml bottle Dragon Vineyard Howell Mountain Zinfandel, 2004
Just so we're clear, this vineyard gives us a wine that is everything a Howell Mountain Zinfandel should be. We find an exploding nose of cracked black pepper (verses the fine white pepper of the Rattlesnake), notes of chocolate and dark fruit flavors.
(1) 750 ml bottle Duarte Contra Costa County Zinfandel, 2004
As usual, the Duarte Zinfandel provides a myriad of flavors and texture. In the nose it is reminiscent of southern Rhone with aromas of garrique, black cherries and spice. Don't be fooled, however, this is a big and intense wine whose finish is robust and complex.
(1) 750 ml bottle Dusi Vineyard Paso Robles Zinfandel, 2004
This extremely aromatic, fruit-driven wine presents a radiant red raspberry color. It offers very rich, ripe black cherries with layers of tea, clove and pepper. Of all the wines in their Paso portfolio, this is the juiciest and fleshiest.
(1) 750 ml bottle Juvenile California Zinfandel, 2004
Juvenile is a blend of young vine fruit from Hayne, Moore, Duarte and Pesenti vineyard... all proven Zinfandel sites. It is medium bodied and has a beautiful dark ruby red color. The finish is brilliant.
(1) 750 ml bottle Old Vines California Zinfandel, 2004
In keeping with the 2003 Old Vines, this year's blend represents all that is Turley. It shows their style in the nose and mouth and is a wonderful representation of the possibilities of organically farmed old vine Zinfandel. The tannins are soft and balance well with the stalwart acidity with strong finish.

The yields from the 2004 growing season at Dogtown were exceptionally low. Not your typical Lodi vineyard. Dark and spicy with a hint of soy sauce. The Flavors are dark and sweet.
(1) 750 ml bottle Moore "Earthquake" Vineyard, Napa Valley, Zinfandel, 2004
Kirsch liquor, berries, lush red fruits, Zin spike and oak. This is Moore really strutting its stuff! The grandeur of the vines is demonstrated in the wine from this 99 year old vineyard.
(1) 750 ml bottle Pesenti Vineyard Paso Robles, Zinfandel, 2004
Dark in the center and bright on the edge the color indicates the high limestone content in the soil. The acidity fits well with the weight of the wine and gives it a hedonistic balance which adds to the long and complex finish.
(1) 750 ml bottle Tofanelli Vineyard, Napa Valley, Zinfandel, 2004
Bright red all the way. Sweet red fruits, brambleberry, red licorice from the corner store, spice and a touch of oak. Medium to full bodied. The finish is long and piquant with good persistence of dark red fruit flavor.
(1) 750 ml bottle Ueberroth Vineyard Paso Robles, Zinfandel, 2004
This wine quickly becoming a house favorite. Notorious for its balance of concentration and acidity.
(1) 750 ml bottle Library, Napa Valley, Petite Syrah, 2004
Dense, dark color to the edge. The Library Vineyard is an all-American planting of Petite Syrah. Some of the aromas are classic like dark fruit, meat and tar; on the other hand some are not like orange blossom, for example. Rich baker's chocolate in the mouth. Big, bold petite syrah tannins and a finish that keeps giving.
